Using too much force means you lose control of the ball and where it goes. Lack of control can cause your ball to end up in the gutter.
The best way to throw a ball straight is to hold it so that your palm is aimed straight up. Ideally, your grip on the ball should be as though you slid your hand beneath it and lifted it up from there. When you have your grip firm on the ball, swing your arm and release the ball onto the alley, making sure you aimed towards the pins. You can reduce the likelihood of your ball curving this way. You can make your ball curve if you wish by simply tilting your hand slightly until your thumb is almost pointing at your on the side. You're able to use this technique to roll your ball in a slight arc toward the pins you want to hit. This can be very useful if you know you often aim a little off center, so giving it a bit of a curve can correct this so you can increase your chances of hitting the center pin.
One thing you can do is very slightly and gently twist your fingers as you let go of the ball. What this will do for you is make the ball curve away from the gutter. This type of release puts 'hook' on the ball, and you'll notice it curve into the center of the pins. Be careful! Too much finger twisting will send your ball into the opposite gutter.
